Quesadillas originated in Mexico and it took the world by storm along with its cousins in tortilla wraps. We chose this dish because its easy to do, fast to make and is extremely addictive! CHICKEN QUESADILLAS Makes 3 IINGREDIENTS ½ lb (225g) boneless, skinless chicken breast, diced 1 ½ Tbsp pre-made fajita seasoning or make your own (see below) 1/2 medium white onion, chopped (about 1/2 cup) 1/2 cup (75 g) chopped bell pepper, any color (i used greed and red) 1 tbsp lemon juice 3 (10 inch) flour tortillas 1 cup (100 g) shredded cheddar cheese 1 cup (100 g) shredded monterey jack cheese Fajita seasoning: 1 tsp chili powder ½ tsp paprika ½ tsp cumin ½ tsp salt ½ tsp pepper ¼ tsp garlic powder ¼ tsp onion powder ⅛ tsp cayenne pepper Toppings sliced avocado sour cream tomato salsa Thank you for watching!
